Skilled Chinese Takeaway Owner Peels 100 Eggs A Minute

This Chinese takeaway owner has become an overnight viral sensation after videos showing her peeling 100 boiled eggs in a minute were seen 30 million times over the weekend.

Bai Xue, 42, runs a small eatery with her husband in Hanggin Rear Banner, which is a town in the city of Bayannur in China’s northern Inner Mongolia Autonomous Region.

The fit boss, who is also a marathon runner and long-distance cyclist, began trending on 28th March when the hashtag ‘aunty peels 100 eggs a minute’ was seen 230 million times on Weibo – China’s version of Twitter.

The viral footage shows Ms Bai collecting large metal basins full of boiled eggs and effortlessly peeling them with both hands – sometimes even without looking.

She averages 100 eggs every 60 seconds or so, while an ordinary person might manage just one in the same amount of time.

The oddly satisfying footage – posted to Chinese video-sharing platform Kwai – shows Ms Bai going through the entire basin of boiled eggs in no time, leaving each one still round and shiny.

Ms Bai told Asia Wire she employs two staff to look after her busy shop, where long queues of customers wait to order her roasted flatbread, each of which comes with one boiled egg.

Ms Bai, who has had the takeaway for 16 years, says she makes – and peels – more than 600 a day, and thanks to her speedy method, she still has time to prepare other garnishes and tend to customers.

She said: “Business was good in February. We sold more than 2,000 buns every day.

“Since 21st March, we’ve been selling just over 1,000.

“That’s because all the shops have now reopened [since the outbreak], and delivery orders are available again.”

Ms Bai explained her unique ‘water’ method by providing a recipe for batches of under 10 eggs at a time, but it can also be scaled up.

She recommends filling a pot of water with raw eggs inside and cooking at high heat until boiling.

Once boiled, turn to medium heat for 10 minutes, then crack shells of boiled eggs and transfer to cold water for 10 minutes of soaking.

After that, peel with ease and reveal perfectly smooth eggs.
